Ingredients

For the Red Velvet Cake
• 2½ cups all-purpose flour (313g)
• 1½ cups granulated sugar (300g)
• 1 teaspoon baking soda (5g)
• 1 teaspoon salt (5g)
• 1 tablespoon cocoa powder (8g)
• 1½ cups vegetable oil (360ml)
• 1 cup buttermilk (240ml)
• 2 large eggs
• 1 tablespoon vanilla extract (15ml)
• 1 tablespoon white vinegar (15ml)
• 1–2 tablespoons red food colouring

For the Cream Cheese
• 2 cups cream cheese (450g), softened
• 1 cup unsalted butter (227g), softened
• 4 cups icing sugar (500g), sifted
• 1 teaspoon vanilla extract (5ml)

Instructions

Preheat your oven to 175°C (350°F). Grease and line two 8-inch cake pans.

In a large bowl, combine the flour, sugar, baking soda, salt and cocoa powder.

In another bowl, whisk together the vegetable oil, buttermilk, eggs, vanilla extract, vinegar and red food colouring.

Pour the wet ingredients into the dry ingredients and mix until smooth. Do not overmix.

Divide the batter evenly between the prepared cake pans.

Bake for about 30–35 minutes, or until a toothpick inserted into the centre comes out clean.

Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack and allow them to cool completely.

For the frosting, beat the softened cream cheese and butter together until smooth and creamy.

Gradually add the sifted icing sugar and continue beating until light and fluffy. Add the vanilla extract and mix well.

Place one cake layer on a cake board or plate. Spread a generous layer of cream cheese frosting on top.

Place the second cake layer over the frosting and cover the entire cake with the remaining frosting.

Decorate the edges with piped frosting if desired. Crumble a small piece of red velvet cake and sprinkle the crumbs generously over the top and sides.
