nutella stuffed chocolate pancakes
recipe:
(i did 1.5x this in the video)
1½ cups all-purpose flour (190g)
¼ cup cocoa powder (25g)
⅓ cup brown sugar (65g)
2 tbsp granulated sugar (25g)
2 tsp baking powder (8g)
½ tsp baking soda (3g)
% tsp salt
1¼ cups buttermilk (300g)
1 large egg
2 tbsp oil (28g)
1 tsp vanilla
frozen nutella discs (2 tbsp each)
freeze nutella before you start! whisk dry ingredients together.
in a separate bowl whisk wet ingredients.
sift the wet into dry and mix until just combined. batter should be thick thicker than regular pancakes. if it’s runny, add 1-2 tbsp flour. (try letting it rest for ab 2 mins before cooking)
heat pan on low-med heat, lightly grease if your pan is not nonstick.
add a thick scoop of batter. ( if using an ice cream scoop i did 2 heaping scoops & spread it into a circle lol) immediately place frozen Nutella disc in center. cover with more batter until fully sealed.
cover pan with lid.
cook 3-4 minutes low heat until edges set and bubbles form.
flip carefully. cook another 1-2 minutes.
let cool slightly before eating the nutella is hot! enjoy 🙂
