Ingredients
- The Meat: 1 lb smoked sausage or kielbasa, sliced into rounds or large chunks.
- The Potatoes: 1.5 lbs yellow or red potatoes, diced into bite-sized cubes.
- The Vegetables: * 1 large onion, cut into thick wedges or slices.
- 1 green or red bell pepper, sliced (optional).
- The Flavorings:
- 2 tbsp olive oil or butter.
- 1 tsp garlic powder or 2 cloves minced garlic.
- 1 tsp paprika for color and smokiness.
- Seasoning: Salt and freshly cracked black pepper to taste.
- Garnish: Fresh chopped parsley.
Instructions
- Sear the Sausage: Heat olive oil in a large skillet over medium-high heat. Add the sausage slices and cook until they are browned and slightly crisp on both sides. Remove and set aside.
- Cook the Potatoes: In the same skillet, add the diced potatoes. If the pan is dry, add another tablespoon of oil. Season with salt, pepper, and paprika.
- Soft and Crisp: Cover the skillet and cook for about 10 minutes, stirring occasionally, until the potatoes are tender inside.
- Sauté Aromatics: Uncover the pan and add the onions and peppers. Sauté for another 5–7 minutes until the onions are translucent and the potatoes have developed a golden, crispy exterior.
- Combine: Stir the browned sausage and any minced garlic back into the pan. Cook for 2 more minutes to allow the flavors to meld.
- Garnish: Remove from heat and sprinkle generously with fresh parsley.
- Serve: Dish it up straight from the skillet while it’s hot and sizzling.
