Ingredients

  • The Meat: 1 lb smoked sausage (like kielbasa or Italian sausage), sliced into thick rounds.
  • The Vegetables:
    • 1.5 lbs yellow or red potatoes, cubed into 1-inch bite-sized pieces.
    • 1 large onion, cut into chunks or wedges.
    • 2 bell peppers (any color), sliced into thick strips or bite-sized pieces.
  • The Coating: 2–3 tbsp olive oil.
  • The Seasoning: 2 cloves garlic (minced), 1 tsp dried thyme or rosemary, salt, and freshly cracked black pepper.
  • Optional Topping: 1 cup shredded cheese (cheddar or mozzarella).
  • Garnish: Freshly chopped parsley or chives.

Instructions

  1. Preheat: Set your oven to 400°F.
  2. Toss & Season: In a large bowl or directly in an oven-safe skillet, combine the sausage rounds, potato cubes, onions, and peppers.
  3. Coat: Drizzle with olive oil and sprinkle with minced garlic, herbs, salt, and pepper. Toss thoroughly until everything is evenly glistening.
  4. Roast: Spread the mixture in a single layer in the skillet or on a sheet pan. Roast for 30–35 minutes, tossing once halfway through, until the potatoes are tender and golden and the sausage is beautifully browned.
  5. Add Cheese (Optional): If you’re feeling extra indulgent, sprinkle shredded cheese over the hot pan and return it to the oven for 2–3 minutes until bubbly and melted.
