🥘 Ingredients
The Beef Patties
- 1 lb lean ground beef (80/20 or 90/10)
- 1/3 cup panko or plain breadcrumbs
- 1 large egg
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 tsp onion powder and garlic powder
- Salt & Pepper to taste
The Mushroom Gravy
- 8 oz sliced mushrooms (Cremini or Button)
- 1 small yellow onion, thinly sliced
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups beef broth (low sodium is best to control salt)
- 1 tsp Worcestershire sauce
- 1 tsp fresh thyme or parsley (optional)
🔪 Instructions
1. Shape the Patties
In a large bowl, combine all the beef patty ingredients. Mix with your hands until just combined (don’t overwork the meat, or it will be tough). Shape into 4 to 6 oval-shaped patties, about 3/4-inch thick.
2. Sear the Beef
- Heat a large skillet over medium-high heat with a splash of oil.
- Cook the patties for 3–4 minutes per side until browned. They don’t need to be cooked all the way through yet.
- Remove patties from the skillet and set them aside on a plate.
3. Sauté the Veggies
- In the same skillet (don’t wash it!), melt the butter.
- Add the mushrooms and onions. Sauté for 5–7 minutes until the onions are soft and the mushrooms are browned.
4. Make the Gravy
- Sprinkle the flour over the mushrooms and onions. Stir for 1 minute to cook out the raw flour taste.
- Slowly whisk in the beef broth and Worcestershire sauce.
- Bring to a simmer and stir constantly until the gravy begins to thicken.
5. Simmer and Finish
- Place the beef patties back into the gravy.
- Lower the heat to medium-low, cover, and simmer for 8–10 minutes or until the patties reach an internal temperature of 160°F (71°C).
- Taste the gravy and add more salt or pepper if needed. Garnish with fresh herbs.
🍽️ What to Serve it With
Salisbury Steak is practically “married” to these sides:
- Garlic Mashed Potatoes: To soak up all that extra gravy.
- Buttered Egg Noodles: A great alternative to potatoes.
- Steamed Green Beans: To add a bit of crunch and color.
Pro Tip: For a deeper, darker gravy color (like the pros), add a tiny drop of Kitchen Bouquet or a teaspoon of soy sauce to the broth.
