Ingredients:
- 1 ΒΌ cups milk
- 1 large egg
- 3 tbsp butter, melted (plus more for cooking)
- 1 tsp vanilla extract (optional)
- 1 Β½ cups all-purpose flour
- 3 Β½ tsp baking powder
- 1 tbsp sugar (adjust to taste)
- ΒΌ tsp salt

- Mix dry ingredients:
In a large bowl, whisk together flour, baking powder, sugar, and salt. - Mix wet ingredients:
In another bowl, whisk milk, egg, melted butter, and vanilla extract until well combined. - Combine:
Pour the wet ingredients into the dry ingredients.
Gently mix until just combined.
β οΈ Do not overmix β small lumps are okay. This keeps the pancakes extra fluffy! - Rest the batter (optional but recommended):
Let it sit for 5β10 minutes to activate the baking powder. - Cook:
Heat a non-stick pan over medium heat and lightly butter it.
Pour about ΒΌ cup batter for each pancake. - Flip:
Cook until bubbles form on the surface (about 2β3 minutes).
Flip and cook another 1β2 minutes until golden brown. - Serve:
Stack them high and serve warm with butter, maple syrup, fruit, or chocolate chips ππ«
