📝 Ingredients
For the Crispy Chicken
- 2 large chicken breasts (butterflied or sliced in half horizontally)
- Salt & black pepper (to taste)
- ½ tsp garlic powder
- ½ tsp paprika
- ½ cup all-purpose flour
- 2 large eggs
- 1 tbsp milk
- 1 cup breadcrumbs (Panko for extra crisp)
- ½ cup grated Parmesan cheese
- Vegetable oil (for frying)
For the Alfredo Sauce
- 2 tbsp butter
- 2 cloves garlic (minced)
- 1½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt & black pepper (to taste)
- Optional: pinch of nutmeg
For the Pasta
- 300 g (10 oz) fettuccine pasta
- Salt (for pasta water)
Garnish (Optional)
- Chopped chives or parsley
- Extra Parmesan cheese
👩🍳 Instructions
1️⃣ Prepare the Chicken
- Season chicken with salt, pepper, garlic powder, and paprika.
- Set up 3 bowls:
- Bowl 1: flour
- Bowl 2: eggs + milk (whisked)
- Bowl 3: breadcrumbs + Parmesan
- Dredge chicken in flour → egg mixture → breadcrumb mixture.
- Press firmly so crumbs stick well.
2️⃣ Fry the Chicken
- Heat oil in a pan over medium heat.
- Fry chicken for 4–5 minutes per side until golden brown and cooked through.
- Transfer to a paper towel and rest. Slice before serving.
3️⃣ Cook the Pasta
- Boil salted water.
- Cook fettuccine according to package instructions until al dente.
- Drain and set aside (reserve ½ cup pasta water).
4️⃣ Make the Alfredo Sauce
- In a pan, melt butter over medium heat.
- Add garlic and sauté for 30 seconds (do not brown).
- Pour in heavy cream and simmer for 3–4 minutes.
- Stir in Parmesan gradually until smooth.
- Season with salt, pepper, and nutmeg (optional).
5️⃣ Combine
- Add pasta to the Alfredo sauce.
- Toss gently until fully coated (add pasta water if needed).
- Plate pasta and top with sliced crispy chicken.
- Spoon extra sauce over chicken.
