☕ Creamy Latte Cake

🧾 Ingredients

Cake

  • 1½ cups all-purpose flour
  • ¾ cup sugar
  • ½ cup milk
  • ½ cup vegetable oil
  • 2 eggs
  • 1 tbsp instant coffee (espresso powder)
  • 1 tsp vanilla extract
  • 1½ tsp baking powder
  • Pinch of salt

Creamy Latte Topping

  • 1 cup milk
  • ½ cup heavy cream
  • 2 tbsp instant coffee
  • 3 tbsp sugar
  • 2 tbsp cornstarch
  • 100 g milk or dark chocolate (chopped)

👩‍🍳 Instructions

1️⃣ Make the Cake

  1. Preheat oven to 350°F (175°C). Grease a rectangular baking dish.
  2. Dissolve instant coffee in warm milk.
  3. In a bowl, whisk eggs and sugar until light.
  4. Add oil, vanilla, and coffee milk. Mix well.
  5. Add flour, baking powder, and salt. Mix until smooth.
  6. Pour batter into the dish and bake 25–30 minutes until a toothpick comes out clean.
  7. Let cake cool slightly.

2️⃣ Prepare the Creamy Latte Topping

  1. In a saucepan, whisk milk, cream, sugar, coffee, and cornstarch.
  2. Cook on medium heat, stirring constantly, until thick and creamy.
  3. Remove from heat and add chopped chocolate. Stir until fully melted and glossy.

3️⃣ Assemble

  • Pour the warm latte cream over the cake.
  • Smooth the top and refrigerate 1–2 hours until set.

  • Serve cold for the best creamy texture
  • Use espresso powder for stronger coffee flavor
  • Add cocoa powder to the topping for a mocha twist
