Brown butter Chocolate chip banana bread 🍌

Ingredients:

3 ripe (330g) bananas, peeled and mashed
8 tbsp (113g) unsalted butter, melted
1 egg, room temp
1/3 cup(67g) granulated sugar
1/2 cup (100g) light brown sugar
1 tbsp vanilla bean paste
1/3 cup (80g) sour cream or greek yogurt
1 1/2 (190g) cup all purpose flour
1 tsp baking soda
Pinch of salt
1 cup (170g) semi sweet chocolate chips + more for sprinkling on top

Method:

Add butter to a light-colored saucepan over medium heat. Melt completely. It will foam and bubble stir constantly.
Once butter turns deep golden amber and smells nutty, remove immediately from heat.
Pour into a bowl (scrape all the brown bits in).
Let cool 5–10 minutes before using.

Preheat the oven to 350 F. Line a 9*5 loaf pan with parchment paper.

Make a wet batter. In a large mixing bowl, add the mashed banana and browned butter. Whisk them thoroughly. Add the brown sugar and granulated sugar mixture and mix for 1-2 min until well combined. Crack in the egg and whisk until combined. Add the sour cream and vanilla bean paste and mix for 1-2 minutes until everything is well combined.

Make dry batter: In a separate bowl combine all purpose flour, salt and baking soda.

Gradually add dry ingredients to the wet batter, add in chocolate chips. Mix until just combined. Do not over mix the batter at this point.

Pour the batter into the prepared loaf pan , top with more chocolate chips if desired. Bake the banana bread for 55 – 60 min or until the toothpick inserted comes out clean.

Let cool completely before cutting and serve.
