Ingredients
- The Chicken:
- 1.5 lbs boneless skinless chicken breasts, cut into 1-inch cubes.
- 1/2 cup cornstarch.
- 2 large eggs, beaten.
- 1/4 cup vegetable oil (for searing).
- The Sweet and Sour Sauce:
- 3/4 cup sugar.
- 4 tbsp ketchup.
- 1/2 cup apple cider vinegar.
- 1 tbsp soy sauce.
- 1 tsp garlic salt.
- Garnish: Sliced green onions.
Instructions
- Coat: Place the chicken cubes and cornstarch in a large bag and shake until evenly coated.
- Dip & Sear: Dip the cornstarch-coated chicken into the beaten eggs. In a large skillet with oil over medium-high heat, sear the chicken until golden brown on all sides (it does not need to be cooked through yet).
- Arrange: Place the seared chicken in a single layer in a greased 9×13 inch baking dish.
- Sauce: In a small bowl, whisk together the sugar, ketchup, apple cider vinegar, soy sauce, and garlic salt.
- Pour: Pour the sauce evenly over the chicken cubes in the baking dish.
- Bake: Bake in a preheated oven at 325°F for 45–50 minutes. Crucial Step: Turn the chicken every 15 minutes to ensure every piece is thoroughly coated in the thickening glaze.
- Serve: Once the sauce is thick and bubbly, remove from the oven and garnish with green onions. Serve over a bed of fluffy white rice.
