Salisbury Steak Mushroom Gravy

🥘 Ingredients

The Beef Patties

  • 1 lb lean ground beef (80/20 or 90/10)
  • 1/3 cup panko or plain breadcrumbs
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp onion powder and garlic powder
  • Salt & Pepper to taste

The Mushroom Gravy

  • 8 oz sliced mushrooms (Cremini or Button)
  • 1 small yellow onion, thinly sliced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth (low sodium is best to control salt)
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme or parsley (optional)

🔪 Instructions

1. Shape the Patties

In a large bowl, combine all the beef patty ingredients. Mix with your hands until just combined (don’t overwork the meat, or it will be tough). Shape into 4 to 6 oval-shaped patties, about 3/4-inch thick.

2. Sear the Beef

  1. Heat a large skillet over medium-high heat with a splash of oil.
  2. Cook the patties for 3–4 minutes per side until browned. They don’t need to be cooked all the way through yet.
  3. Remove patties from the skillet and set them aside on a plate.

3. Sauté the Veggies

  1. In the same skillet (don’t wash it!), melt the butter.
  2. Add the mushrooms and onions. Sauté for 5–7 minutes until the onions are soft and the mushrooms are browned.

4. Make the Gravy

  1. Sprinkle the flour over the mushrooms and onions. Stir for 1 minute to cook out the raw flour taste.
  2. Slowly whisk in the beef broth and Worcestershire sauce.
  3. Bring to a simmer and stir constantly until the gravy begins to thicken.

5. Simmer and Finish

  1. Place the beef patties back into the gravy.
  2. Lower the heat to medium-low, cover, and simmer for 8–10 minutes or until the patties reach an internal temperature of 160°F (71°C).
  3. Taste the gravy and add more salt or pepper if needed. Garnish with fresh herbs.
