Prep time: 20 mins | Cook time: 25 mins | Servings: 4 (about 8–10 bombs)
Ingredients
- The Meat: 1 lb lean ground beef.
- The Stuffing: 4 oz sharp cheddar cheese, cut into 1-inch cubes.
- The Wrap: 8–10 slices of thick-cut bacon.
- The Glaze: 1/2 cup of your favorite smoky BBQ sauce.
- Seasoning: 1 tsp garlic powder, 1 tsp onion powder, salt, and black pepper.
Instructions
- Prep the Meat: In a bowl, mix the ground beef with the garlic powder, onion powder, salt, and pepper.
- Form the Bombs: Take a small handful of the beef mixture and flatten it in your palm. Place a cube of cheddar cheese in the center.
- Seal: Roll the meat around the cheese into a tight ball, ensuring no cheese is peeking out to prevent it from leaking during cooking.
- Wrap in Bacon: Wrap each meatball tightly with a slice of bacon, securing it with a toothpick if needed.
- Bake or Air Fry: Place the bombs on a wire rack over a baking sheet. Bake at 400°F for 20–25 minutes until the bacon is crispy and golden.
- Glaze: Brush the meatballs generously with BBQ sauce during the last 5 minutes of cooking to create a sticky, caramelized finish.
- Serve: Remove toothpicks and serve hot while the cheese center is still perfectly melted and gooey.
