Ingredients
- The Meat: 1 lb lean ground beef.
- The Vegetables:
- 1/2 head of green cabbage, chopped into bite-sized pieces.
- 1 large red bell pepper, diced.
- 1 large green bell pepper, diced.
- 1 medium onion, diced.
- The Flavorings:
- 2 tbsp soy sauce or coconut aminos.
- 1 tbsp tomato paste.
- 2 cloves garlic, minced.
- Seasoning: Salt, black pepper, and a pinch of red pepper flakes for heat.
Instructions
- Brown: In a large skillet or deep baking dish over medium-high heat, brown the ground beef until no longer pink. Drain any excess grease.
- Sauté Aromatics: Add the diced onions and garlic to the meat. Cook for 2–3 minutes until the onions are translucent and fragrant.
- Add Veggies: Stir in the chopped cabbage and diced bell peppers.
- Season & Sauce: Add the tomato paste, soy sauce, salt, pepper, and red pepper flakes. Toss everything together until the vegetables are well-coated.
- Simmer: Cover the pan and lower the heat to medium. Let it cook for 10–12 minutes, stirring occasionally, until the cabbage is tender and the peppers have softened.
- Finish: Once the mixture is savory and the juices have reduced, remove from heat.
- Serve: Serve hot as a standalone low-carb meal or over a bed of steamed white rice.
