Ingredients
- The Shells: 8 medium flour tortillas.
- The Protein: 1 lb lean ground beef, seasoned with taco spices.

- The Sauce: 1 cup red enchilada sauce or mild taco sauce.
- The Cheesy Blanket: 2 cups shredded Mexican cheese blend.

- Diced Roma tomatoes.

- Sliced black olives.
Instructions
- Crisp the Shells: Lightly fry the flour tortillas in a skillet with a small amount of oil until they are golden and rigid, or bake them at 400°F for 3–5 minutes per side until crunchy.
- Cook the Meat: Brown the ground beef in a skillet over medium heat. Drain the grease and stir in your favorite taco seasoning and a splash of water.
- Assemble the Base: Spread a thin layer of warm refried beans onto four of the crispy tortillas. Top the beans with a generous layer of the seasoned ground beef.
- The Pizza Top: Place a second crispy tortilla on top of the beef layer. Spread a thin layer of enchilada sauce over the top tortilla.
- Add Cheese: Sprinkle the shredded cheese blend evenly over the sauce.
- Bake: Place the pizzas in a 400°F oven for 5–8 minutes, or until the cheese is completely melted and bubbly.
- Final Flourish: Immediately after removing from the oven, top with diced tomatoes, green onions, white onions, and black olives.
- Slice: Use a pizza cutter to slice into quarters and serve immediately while the shells are still perfectly crunchy.
