🍗 Chicken & Mushrooms in Garlic Tomato Sauce (Skillet Recipe)

🧄 Ingredients

  • 500 g (1 lb) chicken breast or thighs, sliced
  • 250 g mushrooms, sliced
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup tomato sauce (or crushed tomatoes)
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • ½ tsp chili flakes (optional)
  • ½ tsp dried oregano or thyme
  • ½ cup chicken broth or water
  • 1 tbsp butter (optional, for richness)

👩‍🍳 Instructions

1️⃣ Sear the chicken

  • Heat 2 tbsp olive oil in a skillet (medium-high heat)
  • Add chicken, season with salt & pepper
  • Cook 3–4 min per side until golden
  • Remove chicken and set aside

2️⃣ Cook mushrooms

  • Add 1 tbsp olive oil to same pan
  • Add mushrooms
  • Cook 5–7 min until browned and soft

3️⃣ Make the sauce

  • Add garlic → cook 30 seconds
  • Add:
    • Tomato sauce
    • Paprika
    • Oregano
    • Chili flakes
  • Stir well
  • Pour in chicken broth
  • Simmer 5 minutes

4️⃣ Combine & finish

  • Return chicken to pan
  • Add butter (optional)
  • Simmer 8–10 minutes until sauce thickens
  • Taste and adjust seasoning
