Prep time: 10 mins | Cook time: 45–55 mins | Servings: 6
Ingredients
- The Meat: 2 lbs lean ground beef.
- The Binder: 1 cup seasoned breadcrumbs (Italian or Panko).
- The Moisture: 2 large eggs, lightly beaten.
- The Flavor: 1/2 cup of your favorite BBQ sauce or ketchup (plus extra for the glaze).
- The Hidden Gem: 1 packet dry onion soup mix (provides all the onion and herb seasoning needed).
Instructions
- Mix: In a large bowl, combine the ground beef, breadcrumbs, beaten eggs, onion soup mix, and the 1/2 cup of BBQ sauce/ketchup. Mix by hand just until incorporated—avoid overworking the meat to keep it tender.
- Shape: On a greased or parchment-lined sheet pan, form the mixture into a rectangular loaf about 2 inches thick.
- Glaze: Spread a generous additional layer of BBQ sauce or ketchup over the top and sides of the loaf.
- Bake: Place in a preheated oven at 350°F. Bake for 45 to 55 minutes or until the internal temperature reaches 160°F.
- Rest: Remove from the oven and let the meatloaf rest on the sheet pan for at least 10 minutes. This allows the juices to redistribute so the slices stay intact.
- Slice: Cut into thick, hearty slices and serve immediately, drizzling any extra pan juices over the top.
