1. The Classic Dinner “Hobo Casserole”
This version is famous for its layering technique. Unlike many casseroles, you don’t always have to brown the meat first if you use lean beef, as it cooks in its own juices under the potatoes.
Ingredients
- The Base: 1 lb Lean Ground Beef (90% or higher) or Ground Turkey.
- The Veggies: 1 small Onion (diced) and 2 cups Frozen Mixed Veggies (peas/carrots/corn).
- The Potatoes: 1 pkg (30 oz) Frozen Shredded Hash Browns, thawed.
- The Sauce: 1 can (10.5 oz) Cream of Mushroom soup + 1/2 cup Milk + 1 tbsp Worcestershire sauce.
- The Top: 2 cups Shredded Cheddar Cheese + 1 cup French Fried Onions (optional).
Instructions
- Layer One: Press the raw ground beef into the bottom of a greased 9×13 dish. Season with salt, pepper, and garlic powder.
- Layer Two: Sprinkle the diced onions and mixed vegetables over the meat.
- Layer Three: Spread the hash browns evenly over the veggies.
- The Pour: Whisk the soup, milk, and Worcestershire sauce together. Pour it evenly over the potatoes.
- Bake: Cover tightly with foil. Bake at 350°F for 1 hour.
- Finish: Remove foil, top with cheese (and fried onions), and bake for another 10–15 minutes until bubbly and the meat is fully cooked.
2. The “Hobo Breakfast” Casserole
This is the “morning version,” often served at camps or large family brunches. It’s more of a “scramble” style baked in a dish.
Ingredients
- The Protein: 1 lb Ground Breakfast Sausage (browned and drained).
- The Potatoes: 1 bag (30 oz) Frozen Shredded Hash Browns, thawed.
- The Binder: 8 large Eggs + 2 cups Whole Milk.
- The Cheese: 2 cups Shredded Sharp Cheddar.
- Seasoning: 1 tsp Salt, 1/2 tsp Black Pepper, 1/2 tsp Onion Powder.
Instructions
- Prep: Preheat oven to 375°F. Grease your baking dish.
- Combine: In a massive bowl, mix the cooked sausage, thawed hash browns, and half of the cheese. Spread into the dish.
- Whisk: Beat the eggs, milk, and seasonings together. Pour the egg mixture over the potato/sausage mix.
- Bake: Bake uncovered for 35–40 minutes.
- Melt: Sprinkle the remaining cheese on top during the last 5 minutes of baking.
Key Tips for the “Hobo” Style
- The “No-Pre-Cook” Rule: If you are using the Dinner version with raw beef, you must use lean meat (92/8 or 95/5) or your casserole will be swimming in grease. If you only have 80/20 beef, brown it in a pan and drain it first!
- The Squeeze: If your hash browns feel very wet after thawing, squeeze them in a paper towel. This prevents the casserole from getting “mushy.”
